This quick and easy recipe for baked zucchini fries served with a side of The Italian Cooks sauce can be used as a delicious appetizer or side dish.

3 small zucchini-ends trimmed, halved, and cut into 1/2 inch strips.
1 cup of bread crumbs
1/2 cup of grated parmesan cheese
2 eggs, beaten
salt and pepper to taste
1 cup or more of your favorite italian cooks sauce
1Preheat oven to 425 degrees.
2Line a baking sheet with aluminum foil and spray with cooking spray.
3Stir bread crumbs and cheese together in a shallow bowl.
4Whisk the eggs in a separate shallow bowl.
5Season the zucchini strips with salt and pepper.
6Working in batches, dip the zucchini into the egg mixture then roll them in the bread crumb mixture.
7Place the zucchini strips on your prepared baking sheet. Bake the zucchini fries in the preheated oven for 20-25 minutes.
8Halfway through, turn them over and finish baking till they are golden brown.
9Place on serving dish with a heated cup of The Italian Cooks Sauce.
