Zesty Lime Salmon
If you are a Costco shopper like I am, next time you go make sure to pick up a large salmon filet and make a delicious, healthy, and simple meal!

2 - 3 pound salmon filet
3 fresh limes (set aside a few slices)
3 garlic cloves
1/2 cup kerrygold butter
1/2 cup local honey
1 tsp sea salt
1 tsp fresh cracked black pepper
3 cups brussels sprouts
1Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
2Melt your butter and whisk in local honey, 3 chopped garlic cloves, and the juice from 3 limes (minus a few slices for the top of the salmon).
3Place the salmon on the baking sheet along with 3 cups of Brussels sprouts placed around the salmon and pour your marinade over the top of the fish and veggies.
4Arrange your lime slices that you have set aside across the top of the salmon and sprinkle your sea salt and cracked black pepper over everything.
5Bake for 20-25 minutes depending on how big of a filet you have, then switch your oven to broil and bake for another couple of minutes until the top is slightly brown and bubbly.
Substitute the Brussels sprouts for any vegetables you have on hand or that you enjoy (i.e. green beans, carrots, broccoli, or asparagus)
