Wild Raspberry Chia Pudding

Having recently gone berry picking with my family, we are now swimming in heaps of fresh wild raspberries. We all know the shelf life of such delicate fruits which lead me to thinking - what better thing to do then make a delicious raspberry chia pudding?

Main Ingredients

2/3 cup chia seeds

1/2 tbsp maple syrup

1/2 tsp cinnamon

1/2 cup almond milk

1/3 cup raspberry honey water (need 1 cup raspberries, 2 tbsp honey and 2 tbsp cold water)


1Prepare raspberry honey water a day before to let the raspberries sweeten. In a small container combine 1 cup fresh raspberries, 2 tbsp of honey and 2 tbsp of cold water. Cover and let sit in refrigerator over night.

2In a medium size bowl add chia seeds, almond milk, maple syrup and cinnamon. Whisk together until evenly combined. Raspberry honey syrup should be enough to fill 1/3 cup. Add and mix well.

3Spoon pudding into 4 small ramekins and let chill for 1-2 hours.
