Whole Grain Picnic Salad

1 package of trader joe's harvest grain blend
2 cups vegetable broth
1 1/2 cups water
1 organic red bell pepper
2 organic celery sticks
2 organic tomatoes
1 Large or two small organic carrots
1 Small organic onion
1/3 cup olive oil
1/4 cup red wine vinegar
1 1/2 tbsp maple syrup
1 tbsp dijon mustard
1/2 tbsp oregano
1 tsp salt
1/2 tsp black pepper
1In a large pot, heat the vegetable broth and water. When it begins to simmer, add the bag of Trader Joe's harvest grains. Cover and lower heat, but be sure to stir frequently so the grains don't stick to the bottom of the pot. When the grains are done, remove from heat and let cool.
2While the grains are cooking, dice all vegetables and place in a large serving bowl.
3In a small bowl, whisk all dressing ingredients together. Set aside.
4When the grains have cooled, add to the bowl of vegetables and stir to combine. Add dressing and stir again until incorporated.
5Place in the refrigerator and serve cold or at room temperature. Store extras in an airtight container in the refrigerator for up to a couple days. This recipe can be made the night before serving.
