White Christmas Mojito
Perfect big batch cocktail for your next Christmas or Holiday party

1 cup lime juice
1/4 cup packed fresh mint leaves
1/4 cup sugar
1/2 cup white rum
1/2 cup coconut rum
1 cup coconut milk
sparking water (for topping)
mint leaves (for garnish)
pomegranate arils (for garnish)
1In a large pitcher, muddle the lime juice, sugar and mint leaves until the leaves have broken down
2In a blender, combine the white rum, coconut rum, and coconut milk and pulse until smooth.
3Pour over the mint/lime/sugar mixture and stir to combine.
4Chill until ready to serve.
5To serve, divide ice among glasses and fill halfway with the mojito mix. Top with sparkling water. Garnish with mint leaves & pomegranate arils
-Cranberries also work well as an alternative garnish to pomegranate arils. -For a lower carb cocktails substitute 1/4 sugar for 1/2 tbsp of stevia or 1/2 tsp liquid stevia.
