White Bean Rosemary & Thyme Dip

Soak the white beans overnight on the counter covered, or in the fridge if kitchen temp. is over 80 degrees f. Wrap 2-3 cloves of garlic in aluminum foil and roast at 400 degrees for 15 minutes. Remove from oven and allow to cool before unwrapping, peeling, and then set them aside.

Main Ingredients

1 cup dried white beans

1 cup artichoke hearts

1 sprig fresh rosemary

2 large sprigs of thyme

1/4 cup raw cashews, soaked for at least 2 hours, then drained

2 - 3 cloves of garlic, roasted until lightly golden brown and squishy

3/4 tsp salt

1/2 tsp white pepper

2 tablespoons white wine vinegar

additional fresh thyme and finely chopped rosemary for garnish

lemon juice for serving
