White Bean Dip With Garlic Bread

This dip is the perfect hearty fare for a cocktail party. The beans offer protein, keeping guests satisfied. This tastes great with wine or cocktails. It also makes a flavorful afternoon snack.

Main Ingredients


3 cup  olive oil

2 garlic cloves

1/4 cup italian or flat-leaf parsley (loosely packed)

pinch of sea salt and ground pepper

1 1/2 tbls fresh lemon juice (about lemons)

garlic bread

1 baguette

3 garlic cloves

2 tablespoons olive oil


1Drain and rinse the beans

2Place beans, lemon juice, garlic, olive oil and parsley in a food processor and pulse until combined.

3Add salt and pepper to taste and give one more pulse

4Scrape into a bowl and drizzle with more olive oil.  Serve with pita chips or garlic bread.

5Garlic bread

6Pour the olive oil in a skillet over medium high heat. Slice the baguette horizontally into small slices. Place each slice face down on the skillet and toast. Once one side of the bread has become a golden or light brown color, remove it from the skillet and rub with a garlic clove.

Additional Notes

For flavor variations, try Black Truffle Olive Oil or Rosemary Olive Oil.
