White Bean Chicken & Kale Soup

Heat up 1 tablespoon of avocado oil in a stock pot. Add onions and saute them until they start to soften. Pour in your chicken broth, beans, kale, seasonings and hot sauce. Once it comes to a boil, stir the ingredients and turn down the heat to low. Put the lid on top and continue to cook on low for 20 minutes.

Main Ingredients

1 rotisserie chicken de-boned/chopped

1 tbsp chosen foods avocado oil

6 cups of chicken broth

2 cans great northern beans drained and rinsed

1/2 white onion chopped

2 cups chopped kale

1/2 tsp pink himalayan salt

1/2 tsp black pepper

1 tsp minced garlic

1/2 tsp red pepper flakes

1 tsp paprika

1/2 cup trader joes green dragon hot sauce (optional)

Preparation

1Heat up 1 tablespoon of avocado oil in a stock pot. Add onions and saute them until they start to soften. Pour in your chicken broth, beans, kale, seasonings and hot sauce. Once it comes to a boil, stir the ingredients and turn down the heat to low. Put the lid on top and continue to cook on low for 20 minutes.

Additional Notes

The hot sauce is optional and you can just top your soup with it once it's cooked if you have anyone that isn't a huge fan of the heat.
