Wheat And Arugula Salad

Main Ingredients

1 cup of wheat grains

1 pack of arugula

10 baby tomatoes

olive oil

dijon mustard

pink salt



1Bring a pot of water to a boil, then pour in the wheat. Let boil for 20 minutes. You want an al dente grain, soft on the outside, a bit chewy on the inside.

2While the wheat is boiling, place baby tomatoes in a very hot oven. Leave to roast until the wheat is ready.

3Drain wheat.

4Mix wheat with olive oil and mustard to coat. Salt and pepper to taste.

5Serve over a bed of arugula accompanied by the roasted tomatoes.
