Main Ingredients

2 cups balled or cubed watermelon

8 - 12 oz container mozzarella balls

1/4 cup fresh basil, sliced into thin ribbons

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar, plus more to taste

1/4 cup pine nuts (optional)

dash salt


1Marinate the mozzarella in the olive oil, basil and balsamic vinegar for a half hour.

2Toss with watermelon, pine nuts and salt right before serving.

3Drizzle with more balsamic and garnish with fresh basil.
