Warming Winter Soup
My new favourite warm and hearty parsnip soup!

3 - 4 medium sized parsnips
2 large carrots
1 white onion
3 garlic cloves
1 cup of red lentils
1 can of chopped tomatoes
1 litre of vegetable stock
2 tsp cumin
1 tsp curry
1 tsp dried thyme
a pinch of chili
salt and pepper to taste
1Warm oil in the pan. Add diced onion and stir at high heat, adding a few tablespoons of water to "cook" the onion. Repeat till the onion goes soft and translucent. Add spices to burn them off, then turn heat down to medium. Add chopped garlic and a bit more oil if needed. (Can easily be made without chili if the kids are not a fan.)
2Add diced parsnips and carrot and cook for around 5 min. while stirring.
3Add the drained chopped tomatoes and stir for a few more minutes.
4Add vegetable stock and red lentils and turn up the heat to high until it boils, then let the soup simmer for around 20 min. or until the lentils are cooked and the veggies are softish. Add salt and pepper to taste.
5Serve in bowls and let sit for a few minutes to cool. (If your kids dont like chunky veggies, you can use a stick blender to puree the soup before serving.)
Tip: there's a bigger chance your kids will eat it if its not boiling hot and if its been served in ready portions.
