Main Ingredients

1/2 cup mashed sweet potato

1/2 cup whole milk

3 tablespoons coconut oil, softened

1/4 cup brown sugar

2 teaspoons apple cider vinegar

2 teaspoons pure vanilla extract

3/4 cup unbleached all purpose flour

1/2 teaspoon pumpkin pie spice (cinnamon, ginger, nutmeg, and allspice)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Preparation

1Heat oven to 350 degrees and Grease a 24 cup mini muffin tin (I like to use coconut oil spray).
