Warm Chicken Tzatziki Salad
This recipe is from the good to know website and is a great lunch recipe for an exciting salad with loads of flavour!

For the marinate:
400 g greek yoghurt
12 g fresh mint
2 tsp salt
4 g garlic paste
20 ml olive oil
160 g cucumber
500 g spring onions
240 g cos lettuce
60 ml lemon juice
120 g feta
600 g chicken, diced and marinated
30 ml pommace oil
3 g dried oregano
1Marinade the diced chicken in the marinade for a few hours or overnight.
2Cut the cucumber into batons, slice the spring onions and roughly chop the lettuce and mint and toss together in a bowl,
3Mix half the lemon juice with the olive oil.
4Mix the other half of the lemon juice with the Greek yoghurt, salt and garlic paste for the dressing.
5Pan fry or grill your chicken until cooked through.
6Plate up by putting your salad ingredients in bowls, place your chicken on top, then the yoghurt dressing and finish with crumbled feta and a drizzle of the lemon oil.
