Veggie Hummus Sandwich
This is a super fulling sandwich that won't leave you feeling heavy and sluggish.

your choice of hummus
1/2 of large carrot, sliced into thin strips
1/2 of a large cucumber
2 Slices of a large heirloom tomato
a few slices of red onion, (your preference)
1/2 of an avocado, sliced
handful of clover sprouts
1 romaine lettuces ( leaf)
2 sliced of whole grain bread
salt, pepper, olive oil to taste
1 sheet of parchment paper
1Layer hummus evenly on both slices of bread... I used my cilantro hummus (see previous recipe post)
2Add all toppings layer at a time, starting with the carrots.
3Then layer on the cucumbers, tomatoes, onions, and avocados.
4Add salt and pepper to taste.
5Drizzle on a little olive oil.
6Top sandwich with clover sprouts, lettuces, and the second bread slice.
7Wrap sandwich in parchment paper, and cut. The parchment paper will help to hold the sandwich in place while you cut it, and also when you eat it.
