Vegetarian Butternut Squash Chili
Fall is around the corner and that means it's soup & chili season! If you are looking for a lighter chili or something to eliminate meat this Vegetarian Butternut Squash Chili is the way to go!

3 c diced butternut squash
1/2 yellow onion, diced
4 cloves of garlic, roughly chopped
1 bell pepper, diced (optional)
1 jalapeno, deseeded and diced (optional)
1 tbsp olive oil
1 tbsp cumin
2 tsp chili powder
1 tsp chipotle powder
1/2 tsp paprika
1 can of black beans, drained and rinsed
1 1/2 c vegetable broth
1 c fire roasted tomatoes
3/4 c corn
1 tsp worcestershire
1 tbsp brown sugar
salt + pepper to taste
1Saute onion, bell pepper, and garlic in oil till fragrant. Add the butternut squash.
2Let cook for 5 minutes, stirring occasionally. Season with cumin, chili powder, chipotle powder, and paprika.
3Add the can of tomatoes, black beans and vegetable broth. Let simmer for 10- 15 minutes, don't forget to stir!
4Lastly, add the corn. It just needs to heat up.
5Season with salt and pepper to taste and add the brown sugar and Worcestershire sauce.
6Serve with avocado, cilantro, and tortilla chips!
