Vegan Tofu & Cashew Fried "egg" Rice

Fried rice, we call "chahan" or "yakimeshi" is popular no time lunch menu (using rice left from previous dinner)in Japan. Very basic is fried egg rice, but we use tofu instead. Try with seasonal vegetables, for more colour and flavour.

Main Ingredients

380 g cooked plain rice

1 packaged tofu

handful cashew nuts

3 tbs sesame oil or peanut oil

1 tsp grated ginger

1 star anise seed

little turmeric powder

1 tsp salt

white pepper

little sugar

1 tsp vegetable buillon powder or nutritional yeast flake

fresh coriander leaf

Preparation

1First scramble and mush tofu in a bowl, to look like scramble egg after well drained.

2Heat a wok or large pan with half of oil to fry ginger and star anise till flavour comes, add crushed chilli and tofu to stir fry. Add turmeric powder to make yellowish colour and set aside on separate plate.

3Use same wok or pan, add oil and heat, stir cashew till golden brown.

4Add rice by carefully separating into pieces and fry well.

5Add seasonings, and tofu, well combine, remove from heat.

6Garnish with fresh coriander leaf.

Additional Notes

Non stick wok or pan is recommended unless you are used to a big flamed gas cooking top with iron wok(then more oil required).
