Vegan Spice Bowl
The Vegan Spice bowl is jam-packed with veggies and a boost of plant-based protein to fill you up!

2 cups mixed greens
1/3 cup black beans
1/4 yellow onion
1 red bell pepper
1 green bell pepper
1/4 cup red fire-roasted tomatoes
1/4 cup yellow fire-roasted tomatoes
2 tablespoons olive oil
1Julienne bell peppers and onions.
2Heat olive oil in skillet to medium high heat.
3When the oil is nice and hot, throw in the onions and sauté until soft. I cooked them until semi-caramelized, because I’m not patient enough to completely caramelize them.
4Place the cooked onions into a small bowl and set aside.
5Add another splash of olive oil into the pan. Once it’s hot, throw in the peppers and cook until they get some color.
6Arrange all your ingredients and layer in a bowl, starting with the mixed greens, according to your preference and dig in!
