Vegan Southern Collard Greens
One of the things I love the most about Southern and Soul Food are the yummy collard greens. This is my go-to collard green recipe that has a little spice, and a hint of sweetness that tones down the heat level perfectly.
Prep Time: 00:05
Cook Time: 01:00
16 oz bag of pre-washed and cut collard greens
1 cup red onions, chopped
5 large garlic cloves, minced
2 tbsp vegan butter
1/2 tsp salt, or salt to taste
1/4 tsp red pepper flakes
1/2 tsp worcestershire sauce
2 tsp liquid smoke
2 tbsp brown sugar
1Add 2.5 - 3 litters of water to a large pot on medium-high heat.
2Bring water to simmer and add in collard greens.
3Cook greens for 45 minutes. Their appearance should go from green to emerald green.
4Drain out half of the water and reduce heat to medium.
5Next season greens with vegan butter, salt, red pepper flakes, Worcestershire sauce, and liquid smoke. Mix well.
6Add in chopped red onions, and minced garlic. Mix well and let cook for another 10 minutes.
7After 10 minutes, add in brown sugar, mix well, and cook for another 5 minutes.
Enjoy these greens as a nice side dish to any meal of your choosing. And as always, give this recipe a try ad let me know what you think!
