Vegan Purple Mashed Potatoes

After discovering a bounty of purple potatoes in my garden, I decided to create a recipe for silky smooth vegan mashed potatoes.

Main Ingredients


onion powder

garlic powder



coconut cream

fresh basil


1In a large pot, fill it with all your potatoes.

2Cover in water. Boil until soft.

3With a potato masher or fork, mash for 5-10 minutes.

4Add seasonings of your choice. Season to taste.

5Add coconut cream.

6With a hand mixer, mix until silky smooth.

7Serve with fresh basil.

Additional Notes

I used an unusually large amount of potatoes, so I didn't add the exact measurements. The recipe is super easy, just season to taste and add cream based off of your desired consistency.
