Main Ingredients

1 lb elbow macaroni

15 oz can pumpkin puree

1/2 cup vegetable broth

1 1/2 cups almond milk

1 tsp dry mustard

1/4 tsp garlic powder

1/4 tsp pumpkin pie spice

1/2 tsp salt

pinch of black pepper

1/2 tsp smoked paprika

1 lb frozen peas

Preparation

1Preheat the oven to 350°F and grease a 9x13" baking dish. Set aside.

2Prepare pasta to al dente as according to package instructions in a large saucepan. Drain and keep the pasta in the strainer or in a separate bowl so you can reuse the saucepan.

3In the saucepan, stir together the pumpkin and broth. Heat for 10 minutes over medium heat, stirring regularly. Mix in the milk and spices and cook, stirring regularly until the sauce begins to bubble. Let cook for 2-3 more minutes.

4Pour the pasta into the prepared dish. Pour the sauce over top of the pasta and mix until the pasta is coated. Pour the frozen peas into the dish and mix so that the peas are spread throughout the dish.

5Bake in the preheated oven for 10-15 minutes or until the peas are cooked and the dish is hot all the way through. Serve hot.

Additional Notes

*non-vegan options: Mix in 1 1/2 cups of various shredded/grated cheeses in with the milk. Add 1 cup of cooked, crumbled bacon or cooked, shredded chicken when mixing in the sauce and peas.
