1/2 cup raw cashews
1/2 cup organic unsweetened almond milk/cashew milk
3 tablespoons organic virgin olive oil
2 tablespoons fresh squeezed lime juice
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon salt
1 roma tomato cut in half or 1 small jar of pimentos.
1Soak cashews in hot water for 1 hour
2Boil potatoes and carrots until soft
3Add all ingredients to blender or food processor
4Pour into a dish
5Enjoy with veggies or corn chips
