100 gm cashew nuts

200 gm shredded coconut

6 medjool dates pitted

1 squeezed fresh lemon or lime with peel

coconut oil (two tablespoons)

desiccated coconut for coating


1Bests in a nutribullet or thermomix - pop all ingredients in together and blitz for 59 seconds.

2Pour into a bowl and then handrail and coat with the shredded coconut

3Put straight into fridge
