This delicious vegan lasagna is easy to make and is a crowd pleaser!

one box oven ready lasagna noodles
1 15 oz can tomato sauce
1 can tomato paste
1/2 cup vegetable broth
vegan ricotta cheese
vegan mozzarella cheese
gardein vegan meat crumble
1 medium sized zucchini, minced
1 small yellow onion, minced
salt, pepper, garlic, oregano, and basil to taste
1Pour tomato sauce and paste together into a pot
2Place over medium heat
3add in diced vegetables, broth, and seasonings to taste
4add in meatless crumble and let cook for 5 minutes for all flavors to incorporate.
5Preheat oven to 425 degrees Fahrenheit
6In a 9x9 pan add a small amount of sauce
7Add one layer of noodles, ensuring they overlap
8Add a layer of ricotta cheese and then a layer of mozzarella
9Repeat all layers, finishing with the ricotta cheese on top.
10Cover with foil and cook for 30 minutes
11Uncover and add an additional top layer of mozzarella cheese.
12Cook an additional ten minutes until cheese is melted.
