Vegan, Gluten-free Peach Crisp

Main Ingredients

10 fresh peaches, peeled and sliced

3/4 cup sugar

3 tablespoons corn starch

1 dash of salt

2 tablespoons of cinnamon

2 tablespoons lemon juice

2 cups rolled oats (gluten-free)

3/4 cup brown sugar

3 tablespoons corn starch

3 tablespoons vegan buttery spread

2 tablespoons coconut cream (if you chill canned coconut milk, you can scoop the cream from the top. )


1Preheat the oven to 375 degrees F.

2In a large pot, mix together the peaches, 3 Tablespoons corn starch, cinnamon, sugar, salt and lemon juice.

3Cook and stir over medium heat until juices are clear, thick and bubbly.

4Spray a 9 x 13 baking dish with vegetable spray.

5Pour the peaches into the baking dish and spread evenly.

6In a separate bowl, mix together the remaining ingredients until crumbly.

7Sprinkle the oatmeal mixture evenly over the top of the peaches.

8Put the baking dish into the 375 degree oven and bake for 25 minutes.

9Serve warm with ice cream (or vegan ice cream!)

Additional Notes

The best way to peel the peaches is to put them into extremely hot water, nearly boiling, for about 2 minutes and then remove them and plunge them into ice water. I usually fill my sink with ice water and use tongs to transfer them quickly from the pot to the sink. In a minute, the skins will slip right off for you.
