Vegan Coconut No-bake Cookies

Soft No-Bakes made with coconut oil instead of butter and coconut milk instead of regular milk.

Main Ingredients

4 c. sugar

1 13.5 can coconut milk

1/2 c. coconut oil

6 heaping t. baking cocoa

5 c. cooking oats

1 c. peanut butter

1 c. shredded coconut

1 tsp. vanilla

pinch of salt

Preparation

1In a medium saucepan, mix together the sugar, milk and oil. Bring to a boil and boil for 3 minutes.

2Add the peanut butter and blend in until melted and incorporated. Now add the remaining ingredients. Mix thoroughly and pour into a 9 x 13 greased dish.

3Allow to cool and set before slicing into squares and serving.

Additional Notes

These are softer than regular no-bakes. If you want them thicker, add 1 c. more oats or peanut butter.
