Vegan Chili Dogs
This is a 2 for 1 recipe post! I am going to show you how to make both a vegan chili and a vegan hot dog, which is made from believe it or not... a carrot! Yes, you heard correctly! We are using a carrot as a hot dog, and when I tell you the texture and flavor of the carrot-dog really do mimic that of a meat hot dog, it is truly amazing and delicious! NOTE the serving amount of the chili is 8

For the Carrot Marinade (4 carrots)
1 tbsp vegan worcestershire sauce
1 tsp liquid smoke
1/2 tsp salt
1/2 tsp cumin
1/2 tsp garlic powder
1/4 cup water
For the Vegan Hot Dog
4 regular-large carrots
For the Vegan Chili
1 8oz package of white mushroom, chopped
1 3.5oz package of shiitake mushrooms, chopped
1 cup red onions, chopped
1 cup green bell peppers, chopped
6 garlic cloves, minced
1 cup roma tomatoes, seeded and chopped
1 cup white navy beans, cooked
1 cup black beans, cooked
1 cup red kidney beans, cooked
1 - 1/2 tsp salt (or salt to taste)
1/2 tsp spanish paprika
1 - 1/2 tsp garlic powder
1 - 1/2 tsp cumin
1 - 1/2 tsp liquid smoke
1/2 tsp black pepper
1/2 tsp chipotle chili pepper
1 tsp dry basil
1/4 cup brown sugar
1 tbsp vegan worcestershire sauce
1/2 cup tomato paste
1 tbsp vegan butter
3 tbsp extra virgin olive oil
2 cups water
1To prepare the carrots, shave and boil carrots for 10 minutes until fork tender.
2Once cooled, place in a ziplock bag with vegan Worcestershire sauce, liquid smoke, salt, cumin, and garlic powder.
3Let carrot-dogs marinade overnight - 24 hours.
4To make the chili, in a large deep pot, on high heat, add 2 tbsp olive oil and chopped mushrooms.
5Cook mushrooms for 5 minutes until they start to sweat out moisture.
6Then reduce heat to medium, and add 1/2 tsp salt, 1/2 tsp Spanish paprika, 1/2 tsp cumin, 1/2 tsp garlic powder, 1\2 tsp cumin, 1 tsp liquid smoke, and 1/2 tsp black pepper.
7Mix ingredients together, and add in red onions and green bell peppers.
8Cook onions and peppers for 2 minutes until slightly translucent.
9Add in tomato paste, and stir thoroughly to make sure the paste is evenly distributed. This will help from having any clumps of tomato paste.
10Next, add in water, and bring to a simmer.
11Then add in navy beans, black beans, and kidney beans. stir to combine.
12Add in roma tomaotes.
13Now season chili with 1 tsp salt, 1/2 tsp chipotle chili pepper, 1 tsp cumin, basil, vegan butter, Worcestershire sauce, 1/2 tsp liquid smoke, and brown sugar.
14Mix all ingredients together, turn heat down to medium-low and cover for 20 minutes.
15Next using a potato masher, mash some of the beans in the chili to help make thick and hearty.
16Reduce heat to low, and begin on your carrot-dogs.
17For the carrot-dogs, in a pan on medium heat, add 1 tbsp olive oil carrots, and the marinade.
18Cook carrots for 5 minutes, and place in the broiler for 5-10 minutes until it has reached the desired char.
19Place carrot-dogs in hotdog buns, layer on the chili and serve!
