Main Ingredients


1 cup of whole wheat pastry flour (use whatever flour you have)

1 tbsp of brown sugar

1 tsp of baking powder

2 pinches of salt

1 tsp cinnamon

1 cup of non-dairy milk (i used almond)

1/2 tsp of vanilla extract

2 cups of vital wheat gluten

1 tsp of each seasoning: salt, pepper, onion powder, garlic powder, and paprika

6 - 8 cups of water

2 cups of vegetable broth

1 cup of whole wheat flour (for the breading)

2 tbsp of ground flax seeds/6 tbsp of water


1{"Chicken" - Seitan} Combine vital wheat gluten, seasonings, and water in a bowl; knead it into a ball. Let it rest for 30 minutes.

2In a large pot, add 2 cups of vegetable broth and 6-8 cups of water. Bring to a boil.

3Once 30 minutes has passed and the broth mixture is boiling, break up the seitan into small pieces, stretch them out, and add to the boiling broth. Allow seitan to boil for 30 minutes.

4Prepare the batter; for the wet - combine the flour and seasonings (same seasonings and amount used for the seitan); for the dry - do 1 part flax seeds and 3 parts water; refrigerate for 1 minute to achieve egg-like consistency.

5Double batter the "chicken." Dry-wet-dry, then fry until golden brown.

6{Waffles} Combine the dry ingredients then whisk until completely mixed.

7Add in the wet ingredients; whisk.

8Heat and oil the waffle iron.

9Pour on the mixture, then cook until light brown.
