Vegan Chia Brownies
Since switching to a plant based diet I've had to re-create all my favourite treats without staples such as eggs or dairy. I played around with brownie recipes for a while and these are absolutely my favourite. I made a tray of these and topped them with cashew butter and wanted to eat the whole tray! I hope you like them as much as I do! x x

1 mug buckwheat flour
1 mug hazelnuts
1 mug almonds
2 tablespoons of agave
6 dates (pitted)
4 dessertspoons of chia seeds
2 dessertspoons of coconut oil (melted)
80 g of cacao paste (broken up)
200 ml of filtered water
1Blend the flour and the nuts in your food processor till the whole mixture is like breadcrumbs. I have a magimix and it's amazing but any food processor will do - just make sure to give it some extra time.
2Add all the remaining ingredients except the chocolate and blend until a thick paste is formed.
3Lastly add in the chocolate and pulse the mixture until it's all blended.
4Line a 10" baking tray with greaseproof paper or grease it with coconut oil.
5Scoop the mixture into the try and spend a minute or two flattening it down into the corners. If you want nuts on top add them now and press them down sightly so they stay firm.
6Bake at 180* for 25 minutes.
7Leave them to cool for at least 10 minutes as this helps them to set more firmly.
