Main Ingredients

1/4 cup raw cashews

1 cup diced potatoes-with or without skin

1/2 cup diced carrots

1/2 cup diced butternut squash

3 tbsp nutritional yeast (aka noosh)

1 tsp garlic powder

1 tbsp lemon juice

1 tsp cornstarch

1 tsp light oil (grapeseed, coconut, canola)

1 tbsp vegan butter

1 cup vegetable broth


1Add cashews, potatoes, carrots and squash to small saucepan. Cover with water and bring to boil. Let simmer for 10 mins.

2Drain veggies and cashews and place in blender or food processor.

3Add remaining ingredients and blend until smooth.

4It's READY to use!

Additional Notes

Great to mix in with macaroni for a quick dinner or use as a sauce for tacos, sandwiches or other entrees.
