Mexi Power Wrap
A nutritiously packed meal in a wrap!

2 whole grain tortilla wraps
1 cup chickpeas, cooked
170 g firm tofu, thick slices
1 tomato, diced (optional)
1 handful, spinach, washed
1 avocado, sliced or mashed
tahini dressing, or guacamole (if no avo)
1 lime, juiced (half on side)
1/4 tsp cayenne (adjust to taste)
1/4 tsp cumin (adjust to taste)
3 cloves garlic, chopped
salt and pepper to taste
1/2 tbsp coconut oil
pinch, chili powder
hot sauce or valentina hot sauce
Other Optional Toppings
freshly cut pineapple
1Drain tofu in paper towel for 20 minutes. Once relatively dry, cut into slices.
2In the meantime, chop your tomato and garlic and heat coconut oil in a pan.
3When heated, add garlic and let it brown a little, before adding tofu.
4Add your tofu till it starts to turn golden brown. Add chickpeas and spices. Stir till cooked and add salt and pepper to taste last.
5Warm up your wrap, then add sauce, dips or dressing, then the rest of your ingredients and wrap it up.
