Vegan Bbq Pulled Pork Sandwich
A quick and easy way to veganize pulled pork.

2 cans of young jackfruit in brine or water
1 cup of bbq sauce
1/4 of a red cabbage
1/2 of a red pepper
1 garlic cloves
1 tbsp of lime juice
2 tbsp of coconut cream
salt and pepper to taste
5 leaves of fresh basil
1drain the jackfruit, then cut the core from each piece.
2using a fork, shred the jackfruit by running it along the flesh repeatedly.
3once you've shredded each piece, place all of it in a small to medium pot. add bbq.
4cook on medium to low heat for 10-15 minutes turning frequently.
5while the jackfruit is cooking, assemble the slaw.
6thinly slice half of a red cabbage. pieces do not need to be perfect. once finished, separate any pieces that are stuck together.
7place the cabbage, sliced peppers, garlic, and basil in a bowl. top it with the coconut cream, lime juice, and seasonings. toss. (slaw tastes better after marinating for 20 minutes)
8after 10-15 minutes, remove jackfruit from heat.
9slice the pretzel bun in half, then build the sandwich.
*use lots of slaw!
