Spicy Vegan Anojitos
Delicious Vegan version of a Mexican Favorite!

3 Large spinach tortillas
1 cup (entire triangle - 120g) nuts for cheese "chipotle cheddar" vegan cashew cheese
1/4 cup red bell pepper
1/8 cup green pepper
1 cup chopped green onion
1/2 Clove garlic
1No need to preheat oven! This version thankfully requires no baking.
2As well, because the vegan cheese is "chipotle" the extra addition of jalepno or Sriracha, is not required, but can be added for that next level of "heat".
3Prep Vegetables firstly. Either dice manually or process, the red and green pepper. Green onion should be chopped up a little larger for taste.
4Mince (mash) garlic by simply using the side of a large cutting knife.
5Set these aside.
6Spread cashew cheese liberally on the tortillas. More is definitely better, in this recipe. Add all other ingredients on top of this. Now comes the assembly.
7Place prepared tortilla in front of you, then just slightly fold (half an inch) the right and left curved sides inward. Now starting at the bottom (closest to you) start rolling upward to complete the process. Ahah! Your first anojito!
8Once the other 2 are rolled up, each is sliced into 4 pieces.
