Main Ingredients

2 1/2 cups spelt flour

1/3 cup coconut sugar

1 tbsp baking powder

1/8th tsp salt

1/3 cup coconut butter

1.5 tsp vanilla extract

1 tsp lemon juice

2/3 cup plant-based milk

3/4 cup peaches, small dice

Preparation

1Preheat oven to 425F.

2Whisk together the spelt flour, coconut sugar, baking powder, and salt in a large mixing bowl until combined.

3Using a pastry dough mixer, or a fork, cut the softened coconut butter into the dry ingredients until it is broken up into pieces that are smaller than the size of a pea.

4In a small bowl, mix together the plant-based milk, lemon juice, and vanilla extract. Stir this mixture into the bowl with the dry ingredients and then use your fingertips to gently knead it into a ball of dough, for no more than two minutes making sure not to overwork the dough. The dough should be slightly sticky on the outside but shouldn't be sticking to your fingers too much. If the dough ball is too sticky, mix in more flour 1 tbsp at a time until the dough ball is only slightly sticky on the outside, or if it's a little too dry add in a tiny amount of plant based milk very slowly if needed.

5Shape the dough ball into a circle that is about 8 inches wide and one inch thick. Slice the dough into 6 or 8 triangles using a serrated bread knife or floss. Transfer to a baking sheet lined with parchment paper and bake for 10-15 minutes. After 10 minutes have passed watch them carefully and remove them as soon as the edges turn lightly golden.

6Remove from pan, cool briefly, and enjoy them plain or smothered with more coconut butter or other spread of choice!

Additional Notes
