Unstuffed Bell Pepper Casserole
One of our fabulous customers, Jamie Boboltz, shared this delicious recipe with us. This delicious bell pepper casserole is made with a jar of The Italian Cooks Tomato & Basil sauce.

5 medium green, red or yellow peppers, cut in chunks
1 pound ground turkey or lean ground beef
1 medium onion, chopped
clove of minced garlic
1/4 t. red pepper flakes, opt.
2 c. cooked brown rice
1 jar italian cooks tomato & basil pasta sauce
1 c. shredded mozzarella & 1/2 c. fresh grated parmesan cheese
1Preheat oven to 350 degrees
2Cut stem ends from peppers, remove seeds, cut into chunks.
3Place peppers in saucepan with enough boiling water to cover; cook 2-3 minutes. Drain.
4In non-stick skillet, brown meat with onions and garlic. Season with salt and pepper to taste. Add red pepper flakes if using.
5In 9 x 13 casserole dish, spread peppers in bottom of dish, add layer of seasoned brown meat, layer of cooked brown rice, and cover with jar of your pasta sauce.
6Cover with foil and bake 30 minutes.
7Remove foil and sprinkle with cheeses and bake 10 minutes more.
8Put under broiler until browned, just a couple minutes. Enjoy!
