Unreal Vegan Banana Bread

Main Ingredients

3 cups oats

1 - 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3 over-ripe bananas mashed

2 1/2 tbsp maple syrup

2 1/2 tbsp honey

1/4 cup coconut oil

1 tbsp shredded unsweetened coconut

2 tbsp hemp seed

1 tbsp ground flaxseed

1 tbsp chia seeds

5 tbsp warm water

1 tsp cinnamon

1 tsp pure vanilla extract

2/3 cup chocolate chips (optional: can use vegan chocolate chips or dried fruit instead)

1 tbsp all natural peanut butter (optional)

To Top the Bread

1 tbsp oats

1/2 tbsp hempseed

1/2 - 1 tbsp shredded coconut

Preparation

1Preheat oven to 350 degrees F. Line a 9” × 5" loaf pan with parchment paper, and grease the parchment with coconut oil or simply grease the pan. Make oat flour: Place oatmeal into blender and blend until oatmeal resembles flour.

2Make flax egg by adding 2.5 Tbsp warm water to 1 Tsp ground flax seed. Let sit until it becomes a gel-like consistency; set aside. like the flax egg mix 1 Tbsp chia seed with 2.5 Tbsp of warm water. Also let sit until it becomes a gel-like consistency; set aside.

3Measure out about 2 cups of the oat flour and place in a medium bowl. Whisk in baking powder, baking soda, and salt; set aside. In a separate large bowl, beat mashed bananas then add the honey, maple syrup, coconut oil, flax egg, soaked chia seeds, hemp seeds, cinnamon, vanilla extract and peanut butter (optional) until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined. Fold in chocolate chips (if adding chocolate chips). Pour batter into prepared loaf pan and sprinkle the top of the bread with the toppings you left on the side- oatmeal, coconut and hemp seed.

4Bake for 35-45 minutes or until knife inserted into center comes out clean. Cool 10-15 minutes, then remove from pan and place on wire rack to finish cooling.

Additional Notes

Get creative: add you favourite nuts, nut butter, dried fruit or chocolate chips.
