Ukrainian Honey Cookies (med Pochyvo) Or Медові Печиво
Honey cookies are a special treat anytime of year. I usually make these cookies around Christmas or a bit earlier to celebrate the Feast of St. Nicolas.

1/2 cup butter
1/4 cup brown sugar
1/4 cup granulated sugar
1 egg (i prefer free-range, the yolk is very yellow)
1/2 tsp vanilla
1/2 cup honey (buckwheat honey is the best)
2 cups all-purpose, unbleached flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup chopped or halved pecans
whole walnuts on each cookie
1Combine first three ingredients in a bowl and whip for about 3 minutes. Ensure the butter is at room temperature so that when whipped with the sugars it gets nice and fluffy.
2Add 1 egg (egg should be at room temperature too). Whip until light and fluffy.
3Add 1/2 cup honey and 1/2 tsp vanilla extract, stir to combine.
4On top of wet ingredients measure and add dry ingredients. Mix with mixer to combine until dough comes together in a large ball.
5No need to chill dough. Scoop into 1 tbsp portions on cookie sheet, press nuts into top of cookies. Bake at 375 degrees Fahrenheit for approximately 8 minutes or until slightly brown.
