Main Ingredients

1/2 teaspoon coconut oil

1/4 cup almond flour

1/4 - 1/8 cup mashed ripe banana, honey, maple, or sweetener of choice*

2 tablespoons cocoa powder

2 tablespoons almond milk, water, or coffee**

1 whisked egg

2 hefty pinches of kosher salt or fleur de sel


1In a microwave-safe ramekin, bowl, or mug, melt coconut oil for 1 minute in the microwave. Carefully remove from microwave and swirl coconut oil around the bowl to coat sides to prevent brownie from sticking. No need to waste a crumb of it's magnificence.

2In the same bowl, add coconut flour, sweetener, cocoa powder, almond milk, egg, and pinch of salt. Whisk until the batter is smooth and combined.

3Place in the microwave and cook for 2 minutes. Remove and sprinkle with another pinch of salt. Shamelessly and guiltlessly devour.

Additional Notes

*I used banana and it did NOT lend a banana flavor. **I used a combination of almond milk and coffee, and the coffee does not leave a strong acidic flavor; it merely enhances and deepens the chocolate flavor of the brownie.
