Main Ingredients

100 g of ground turkey meat

1 garlic clove minced

1/4 of a small onion minced

1/3 tbsp of chopped cilantro

1/2 tsp of cumin powder

1 large red bell pepper

1 cup of homemade turkey stock ( i made this quickly by boil some turkey wings with spices for about 20mins)

1/8 cup of pasta sauce ( i used homemade marinara sauce because i always have that in my fridge handy)

1/2 cup of cooked quinoa

1/8 cup of mozzarella

olive oil spray

salt and black pepper to taste

Preparation

1Preheat oven to 400degF

2Saute Onions, Garlic and Cilantro oven medium heat for about 2 minutes and add ground turkey, season with salt, garlic and cumin powder until meat is cooked

3Add Tomato sauce and 1/4 cup of turkey stock and cook on low heat for about 5minutes then Add quinoa.

4Cut the Bell pepper in half and remove all seeds, fill it up with the mixture of turkey and rice, Place in a baking dish, and pour the remainder of the stock on the bottom of the baking dish. Cover tightly with foil and bake for 30minute.

5Remove foil and take cheese top each pepper with cheese, and return under oven broiler, to melt and brown cheese for about 2 minutes. Serve with baby greens.
