Turkey Salad With Apple Cranberry And Pecans
A great use of leftovers for that turkey bird! You can make this anytime of year and use chicken if you have no turkey!

3 cups leftover chicken or turkey, chopped
1 tart apple, cored and chopped
1/4 cup dried cranberries
1/2 cup pecans
2 celery ribs, small dice
1/2 cup olive oil
1/2 cup duke's mayonnaise
1/4 cup sour cream
1/2 tablespoon apple cider vinegar
pinch black pepper
croissants for serving
1Combine the chicken or turkey, apple, cranberries, pecans, and celery in a medium sized mixing bowl.
2In a measuring cup, whisk together mayo, sour cream, vinegar, salt, sugar, and black pepper.
3Add the mayo to the chicken mixture and stir until well combined.
4Store in the refrigerator until ready to serve.
5Serve on croissants or other rolls if you like.
