Salad

4 pre-made turkey burgers (can be fresh or frozen)

1 head of lettuce

1/2 cauliflower, chopped

5 stalks of celery, chopped

3 stems of green onion (scallions), chopped

freshly ground salt and pepper

Dressing

1 1/2 tbsp lemon juice

3 tbsp mustard seed (stone ground mustard)

drizzle of extra virgin olive oil (add more or less based on preference)

freshly ground salt and pepper

1 tsp of dried basil

Preparation

1Cook turkey burgers as directed on package, or in a skillet over medium heat for 10-20 minutes depending on fresh or frozen. Add freshly ground salt and pepper to turkey burgers.

2While turkey is cooking, chop celery, cauliflower, and green onion and set aside.

3Wash and lightly chop lettuce. Add to bowls or lunch containers. Top with celery, cauliflower, and green onion.

4Add dressing ingredients to small dish and mix well.

5When turkey burgers are cooked thoroughly, remove from heat and cut into strips or squares. Add turkey to top of salad.

6Drizzle dressing on top of salads or save dressing in refrigerator for up to 5 days.
