Truffle Brie And Bacon Burger

2 pounds of ground beef
1 pound of ground pork
1 tablespoon of worcestershire sause
1 teaspoon of ground pepper
1 teaspoon of sea salt
2 cups of baby arugula
6 to 8 slices of double creamed brie cheese
6 to 8 slices of thick cut bacon
6 tablespoons of cherry jam, or chutney (i use my home preserved cherry jam)
6 tablespoons of mayo
2 tablespoons of truffle oil
4 gourmet hamburger buns

2In a small bowl add the mayo and truffle oil. Mix together and cover and place in the fridge until you are ready to assemble the burgers.
3In a mixing bowl add the ground meat, then the Worcestershire sauce and salt and pepper. With clean hands mix it all together and form 4 to 6 large patties. Heat a large frying pan to a medium high heat, add a splash of olive oil. Once the pan is hot, cook the patties one or two at a time. Sear the one side by cooking and not moving it for 5 minutes. Flip the patty over and sear the other side. Once they are cooked to an internal temperature of 155-160F then they are done.
4Cut the buns in half width wise. Smear some truffle mayo onto the top and bottom cut portions of the buns, add a tablespoon of cherry jam on top of the top bun. Place the cooked bacon on the bottom bun, then the cooked burger patty, then add 2 to 3 slices of brie cheese on top to the patty. Place arugula on top of the cheese and place the top of the bun on.
