My friend Trudy made this for us a long, long time ago and it is so delicious! Our favorite topping is canned blueberries or cherries. Of course you can use fresh berries of your choice as well, which is a good alternative for health reasons. This no-bake cheesecakse very easy to make and can be made in two pie tins or a cake pan. Enjoy!

3 - 8 oz. cream cheese, softened
1 cup white sugar
4 cups cool whip, thawed
Graham Cracker Crust

1 1/2 cups graham cracker crumbs
6 tablespoons butter, melted
1/3 cup white sugar add all ingredients to list
1Filling: Put cream cheese and sugar in a large bowl, mix well. Carefully fold in Cool Whip, Do not over mix. Put in 9" x 13" cake pan or 2 - pie tins with graham cracker crust. Chill and serve. NOTE: If making your own graham cracker crust, make it first.
2Graham Cracker Crust: Mix crumbs, melted butter, and sugar in a bowl. Press mixture into a 9-inch pie plate. Use a spoon to press the crumbs up the side of the plate and the side of your hand to press down on the top.
3Refrigerate at least 1 hour before filling.
