All the flavors of summer on a plate- grilled shrimp, lime, cilantro, pineapple- in this easy peasy salad. Plus, the components can be made ahead of time, making it a healthy but flavorful weeknight meal.

cilantro-lime slaw
1 bag angel hair slaw
1/2 cup unsweetened coconut yogurt or greek yogurt
zest and juice of a lime
1 teaspoon garlic powder
1 teaspoon hot sauce, add more or less depending on your heat preference
1/3 cup chopped cilantro
salt and pepper to taste
1 pound shrimp, peeled and deveined
1 pineapple, cored and cut into spears
optional add-ins: chopped bell pepper, guacamole, pico de gallo, chopped jalepeno, mango, grape tomatoes
1Prepare Cilantro Lime Slaw up to a day in advance. In small bowl, combine yogurt, lime juice, zest, garlic powder, and hot sauce. Whisk until combined, adding salt and pepper to your liking. In a medium bowl, pour dressing over slaw. Add cilantro and mix until slaw is coated. Refrigerate until ready to serve.
2Heat grill or grill pan to medium heat. Spray with coconut cooking spray.
3Place shrimp on heated grill, sprinkling salt and pepper on shrimp while on the grill. Flip after 5 minutes or until grill-facing shrimp is firm and white. Grill another 5 minutes or until firm. Set shrimp aside.
4Spray grill once more with coconut oil.
5Lay pineapple spears onto grill, flipping after 3-5 minutes once grill marks appear. Grill for another 3-5 minutes.
6On large plate or bowl, layer cilantro lime slaw. Nestle shrimp on top of slaw. Add pineapple and whatever other toppings you happen to have on hand.
This recipe is super flexible. You could sub out the shrimp for any grilled protein. This is the kind of recipe you could clean out your refrigerator with. Got half a jar of olives, a bell pepper, and two green onions? Toss em in!
