Herbed Tofu Feta

Chop your pressed or thawed tofu into cubes that are about 3/4 of an inch in size. In a glass dish mix together the remaining ingredients, then add in the chopped tofu turning the pieces over a few times to coat them. Place in the fridge and marinate for 2-24 hours, the longer the better. Once they have marinated, add them to salads, wraps, or anywhere you'd enjoy vegan feta.

1/2 a block of tofu, drained and pressed or frozen then thawed*

2 tbsp fresh lemon juice

2 tbsp apple cider vinegar

1 tbsp coconut aminos

1/4 tsp salt

1/4 tsp pepper

1/4 tsp dried basil

1/4 tsp marjoram

1/4 tsp thyme

Preparation
