Main Ingredients

3 cups fresh green/ yellow beans

1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can chick peas, drained and rinsed

1/2 an onion, chopped fine

1/3 cup canola oil

3/4 cup white vinegar

2/3 cup sugar

1 tsp garlic salt

1 tsp fresh ground pepper


1Cut the ends off the beans, and cut them to bite size pieces.

2To blanch: bring a pot of water to a boil and prepare a bowl of ice water.

3Place the beans in the boiling water for 3 minutes. (NO MORE, NO LESS) As soon as the 3 minutes are up, drain the beans and put them in an ice bath. This is going to give them a beautiful vibrant color!

4While the beans are cooling, mix the oil, vinegar and sugar together and set aside.

5Mix all the beans together and coat with the vinegar mixture.

6Store in bottles or containers and refrigerate for 6-8 hours.

It gets better with age!
