Main Ingredients

1 c medjool dates

1 c almonds (other nuts like walnuts or pecans would work too!)

1 tsp vanilla extract

as many dark chocolate chips as your heart desires


1Pit medjool dates and cut in halves.

2Place nuts in food processor/blender until nuts are finely chopped. Add in date pieces. Blend until combined. Add in vanilla extract and chocolate pieces and blend again. The mixture should come together kind of like a dough.

3Form mixture into little balls. Sometimes the mixture can be a little dry in which case you can add some more vanilla and blend a little more. When you actually start forming the balls the stickiness of the dates will bind everything together.

4You can eat some right away and/or put them in a baggy and refrigerate. I actually like them better when they have been refrigerated for a while.
