The Easiest Stuffed Sweet Potatoes

4 medium sweet potatoes
2 cups black beans
1 6 oz log goat cheese
2 Ripe avocados
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1Preheat oven to 400 degrees Fahrenheit. Rub sweet potatoes with olive oil and sprinkle with coarse sea salt. Pierce with a fork and bake until tender, about 45 minutes.
2For the beans, rinse 1 cup dried black beans and add to crock pot along with 3 cups water and 1 cup broth. Season with chili powder, garlic powder, and cumin and cook on high for about 5 hours, until tender. OR use a can of black beans.
3After roasting, split sweet potatoes and fill with beans. Top with avocado and goat cheese and serve immediately.
