Main Ingredients

9 roma tomatoes, chopped

2 cloves garlic

1/2 onion, chopped

2 teaspoons salt

1 teaspoon pepper

2 tablespoons olive oil

1 - 2 tablespoons tomato paste

3 - 4 basil leaves

1/4 teaspoon sugar


1Preheat oven to 350 F.

2Bake onions, tomatoes, and garlic cloves up to 60 minutes in the oven, or until edges of onions and tomatoes are blackened.

3Transfer to food processor or use an immersion blender. Add basil leaves and blend until smooth. Add tomato paste to thicken, and blend again.

4Transfer to sauce pot, heating on medium-high. Add sugar, salt, and pepper to taste.


6Can be kept in a freezer bag or fridge for a few days.
