The Best Granola
Adapted from recipe in Super Natural Everyday by Heidi Swanson

4 cups rolled oats
1 1/2 cups nuts (walnuts or pecans work best)
1 cup unsweetened shredded coconut
1/2 tsp salt
2/3 cup dried fruit (raisins, currants, cranberries-whatever you like! )
1 - 2 zest of oranges, depending on how orangey you want it
1/3 cup unsalted butter
1/2 cup maple syrup
1Preheat oven to 300 degrees F (150 C).
2Combine oats, nuts, coconut, salt, dried fruit, and orange zest in a large mixing bowl. Heat the butter in a small saucepan over low heat and stir in the maple syrup. Whisk until thoroughly combined, then pour syrup and butter mixture over the dry ingredients. Stir until combined and everything is well coated. Divid mixture evenly between 2 baking sheets and spread into a thin layer.
3Bake for 40-50 minutes, stirring a couple times along the way, until the granola is toasty and golden brown. You may want to rotate the pans in the oven while they bake to make sure they bake evenly.
4Remove pans from the oven and press down on the granola with a metal spatula- this will help you get those yummy granola clusters. Let cool completely on the pans, then transfer to an airtight container for storage. Enjoy with yogurt, milk, or just on its own!
