The Best Ever Anti-inflammatory Chicken Soup

The most flavorful, soul warming chicken soup you’ll ever make. Seriously, this soup made every cell in my body happy and it could not be more prefect for those months when you’re trying to fight off all sickness. It is absolutely a must make.

Main Ingredients

2 tbl avocado or coconut oil

6 cloves garlic, minced

1 yellow onion, diced

5 large carrots, thinly sliced

2 celery hearts, roughly chopped

2 - 3 tbl fresh grated ginger

2 - 3 tbl fresh grated turmeric

6 cups low sodium bone broth (or stock of your choice)

1 - 1 1/2 pounds boneless skinless chicken breast

1 tbl fresh rosemary, stems removed and chopped

1 tbl fresh thyme, stems removed and chopped

2 - 1/2 cups frozen green beans

1 cup dry quinoa (or israeli couscous)

salt and fresh cracked pepper to taste

Preparation

1Place a large pot or dutch oven over medium high heat and add 2 TBL of oil. Once the oil is hot add your minced garlic, chopped onion, carrots, celery and saute until vegetables begin to soften and the onion becomes translucent.

2Add your grated ginger, turmeric, and garlic. Saute for 1 minute or until fragrant.

3Add your chicken breast, bone broth, rosemary, thyme, salt and pepper. Bring the soup to a boil. Be sure the chicken breasts are completely covered by the liquid.

4Once the liquid is at a boil, stir in your quinoa or couscous and turn the heat down to medium low. Let simmer uncovered for 20-30 minutes or until the chicken is fully cooked.

5Once chicken is cooked, remove the chicken to a cutting board and shred the chicken using 2 forks. Place the chicken back into the pot, add your green beans. Taste and adjust seasonings as needed.

6Serve warm, and enjoy!!
